Harissa Eggs on Hummus Toast

Ingredients

2 eggs

2 tbsp rose harissa

2 slices sourdough bread, toasted

A few spoonfuls of hummus (any variety you love)

Fresh coriander leaves, to garnish

A pinch of salt

Method

  1. Warm a frying pan over medium heat. Add the rose harissa and let it sizzle for a few seconds to release its flavour.
  2. Crack the eggs straight into the pan and season with a pinch of salt. Cook for 2–3 minutes, or until the whites are set and the yolks are done to your liking.
  3. Generously spread the toasted sourdough with hummus.
  4. Place the harissa-fried eggs on top, scatter over a few coriander leaves, and serve right away.

Serving suggestion

Best eaten while the toast is still crunchy and the eggs are warm — it’s simple, bold, and full of flavour.
