Harissa Eggs on Hummus Toast

Ingredients
2 eggs
2 tbsp rose harissa
2 slices sourdough bread, toasted
A few spoonfuls of hummus (any variety you love)
Fresh coriander leaves, to garnish
A pinch of salt
Method
- Warm a frying pan over medium heat. Add the rose harissa and let it sizzle for a few seconds to release its flavour.
- Crack the eggs straight into the pan and season with a pinch of salt. Cook for 2–3 minutes, or until the whites are set and the yolks are done to your liking.
- Generously spread the toasted sourdough with hummus.
- Place the harissa-fried eggs on top, scatter over a few coriander leaves, and serve right away.

Best eaten while the toast is still crunchy and the eggs are warm — it’s simple, bold, and full of flavour.
