Chicken Quesadillas

Ingredients

2 medium flour tortillas (or 4 small ones)

½ cup shredded cheddar cheese

½ cup shredded Monterey Jack cheese

1 small chicken breast, cut into bite-sized pieces

1 tbsp olive oil

1 small onion, finely chopped

½ red bell pepper, diced

1 small tomato, chopped

A pinch of salt

A pinch of black pepper

Method

  1. Cook the filling: Warm the olive oil in a frying pan over medium heat. Add the chopped onion and red pepper and cook for 3–4 minutes until they start to soften.
  2. Add the chicken pieces, season with salt and pepper, and cook for another 5–6 minutes until the chicken is golden and cooked through. Stir in the chopped tomato, cook for one more minute, then take off the heat.
  3. Build the quesadillas: Place a tortilla in a clean, dry pan over medium heat. Sprinkle half of the cheeses evenly across the surface, then spoon some of the chicken mixture onto one side.
  4. Fold the tortilla in half to cover the filling. Press it down lightly with a spatula and cook for about 1–2 minutes per side until the cheese melts and both sides are golden brown.
  5. Repeat with the remaining tortilla and filling.
  6. Let the quesadillas rest for a minute, then slice into halves or quarters.

Serving suggestion

Serve warm with salsa, guacamole, or a dollop of sour cream for dipping.
